Chadon Beni Pesto
1 cup chopped chadon Beni leaves
1/4 cup walnuts
1/4 cup Coconuts of the Caribbean extra virgin coconut oil
1/4 shredded parmesan cheese
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp lemon juice
2 cloves garlic
In a food processor or blender add all ingredients except coconut oil and pulse until fine.
Slowly pour in coconut oil while blending mixture until desired consistency is achieved.
Add pesto to cooked pasta and toss along with meat and vegetables of your choice.
