Coconut Crusted Parfait Cups
These parfait fruit cups have a lower glycemic index than usual due to the fact that they are made with coconut flour and coconut sugar helping you manage your glucose intake. This means that this dessert is actually less likely to spike your sugar levels! Also, coconut flour has more fiber and protein than regular refined flour, making it a more nutritious option. On top of all of that, they taste fantastic :)!

-Makes 4 muffin cups

- 1/2 cup coconut flour
- 1/2 cup oats
- 1 tsp cinnamon
- 1/3 – 1/2 cup cold butter or margarine
- pinch salt
-1 tsp coconut sugar
-1 cup of your favourite fruits

Instructions
1. Preheat oven to 350°F and spray muffin tins with cooking spray or grease with coconut oil
2. Mix ingredients until crumbly and sticks when pressed together
3. Divide into four muffin tins and press until forms a cup
4. Bake for 20 minutes or until golden brown and cooked through
5. Let cool, fill with yogurt and top with your favourite fruits
