Coconut Drops

A locally made Caribbean Delicacy! How many of these tasty treats do you think you can eat πŸ˜‹!?

Coconut Drops

Makes 10 drops

1 cup coconut flour (high in fibre πŸ‘πŸΎπŸ‘ŒπŸΎ)
½ cup finely grated coconut (full of raw nutrition🌴)
ΒΌ cup large pieces grated coconut
Β½ tsp baking powder
ΒΌ tsp baking soda
1/3 cup coconut sugar (lower glycemic levels than cane sugarπŸ™ŠπŸ˜‰)
1 tsp vanilla extract
1 egg
Β½ cup mixed dried fruit (raisins, cherries)
4 Tbsp coconut oil (full of healthy saturated fats 😁)
4 Tbsp Butter, softened


Directions
Preheat oven to 350F
Cream butter and sugar for about 5 minutes
Mix creamed mixture, eggs, extract and oil together until incorporated
Mix dry ingredients together
Pour dry into wet and stir until just mixed together
Let sit for 5 minutes
Drop even spoonfuls of mixture onto lined baking sheet and sprinkle a bit of white sugar across the top (optional)
Bake for 15 minutes or until drops are golden brown.
