Try these 🥞🥞🥞Coconut blueberry pancakes they are absolutely incredible!

3 tbsp Coconuts of the Caribbean coconut flour
1.5 tbsp coconut oil
1 tsp mixed essence
1/2 tsp ground cinnamon
1/4 tsp salt
1 1/4 tsp baking powder
3 tbsp shredded coconut
1/3 cup blueberries (frozen or fresh)
In 2 bowls, separate egg whites from egg yolks.
Using a handmixer beat egg whites until stiff peaks form and set aside.
Add salt, sugar, coconut oil and mixed essence to the egg yolks and beat for 1-2 mins until incoporated. Add the remaining ingredients coconut flour, shredded coconut and cinnamon, mix until fully incoporated.
Add egg whites to the yolk mixture and fold in gently until completely incoporated. Lastly fold in blueberries into the batter.
Heat a non-stick pan on med-low heat spoon batter into pancakes of your desired size and allow to cook until bubbles appear on the surface. Flip pancakes and allow to cook for another 2-3mins. Pancakes best served hot
