Baked Lemon Herb Fish Recipe

Serves 2

 

·       2 fish fillets (we used Snapper)

·       2 tbsp. coconut oil

·       ¼ cup fresh herbs chopped finely (mixed chadon beni and fine thyme)

·       2 cloves garlic minced

·       2 tomatoes

·       Small head broccoli

·       1 sweet pepper, sliced

·       1 onion, peeled and sliced

·       ½ tsp salt

·       ½ tsp ground black pepper

·       1 lemon

 

1.       Preheat the oven to 350F

2.       Mix herbs and coconut oil

3.       Place each fillet in foil large enough to wrap fillet and vegetables

4.       Mix chopped herbs and garlic with coconut oil

5.       Pour half of herb mix over fillet and rub

6.       Mix remaining herbs with vegetables and then surround each fillet with seasoned vegetables

7.       Wrap foil around and place in oven

8.       Remove when fish is cooked through (about 15-20 minutes)
