Pepper Shrimp

Serves 4-6

·       1 lb shrimp, deveined

·       1 tbsp. grated ginger

·       1 med. sweet pepper

·       Tomato chopped

·       1 small carrot

·       1 hot pepper

·       2 pimento peppers

·       2 cloves garlic, grated

·       4 leaves chadon beni, chopped

·       1 small onion

·       1 tsp salt

·       1/2 tsp black pepper

·       1 tsp lime juice

·       2 chives stalk, chopped

·       1 tbsp. coconut oil

·       2 tbsp. tomato paste

·       1 tsp coconut sugar

·       1/4 cup water

 

1.       Season shrimp with ginger, pimento, garlic, black pepper, chadon beni, lime juice, chive, and salt and set aside.

2.       Heat the coconut oil in the pot over a medium flame.

3.       Fry the hot pepper and onions in oil

4.       When onions are translucent add sweet pepper and tomatoes and cook for 1 minutes

5.       Add carrots and cook for another minute

6.       Add shrimp and stir for another minute

7.       Make mix of tomato paste, coconut sugar and water and stir into pot. Let simmer for 5 minutes. Season with additional salt and black pepper to taste
